How to Cook the Perfect Steak Indoors

Reverse Sear Pan

There’s nothing quite like a perfectly cooked steak: crispy on the outside, juicy and tender on the inside. While grilling may be the traditional go-to method, cooking steak indoors is just as effective—especially in colder months or when convenience is key. In this guide, we’ll walk you through how to achieve steakhouse-quality results in the comfort of your kitchen. With the right techniques and tools, like the new Reverse Sear Pan from Certified Angus Beef®, you’ll create meals that are both wholesome and delicious.

Step 1: Choose the Right Cut of Steak

Start with high-quality meat. At Maplecrest Meats, we’re proud to offer a variety of  beef cuts that are perfect for indoor cooking. Look for cuts like ribeye, New York strip, filet mignon, or sirloin. For the best results, opt for steaks that are about 1 to 1.5 inches thick.

Step 2: Gather Your Ingredients and Tools

Ingredients:

  • Maplecrest Meats steak of your choice
  • Salt (preferably kosher or sea salt)
  • Freshly ground black pepper
  • Optional: Garlic, rosemary, or thyme for aromatics
  • Butter or high-smoke-point oil (e.g., avocado oil)

Tools:

Step 3: Prepare the Steak

  1. Bring to Room Temperature: Remove the steak from the refrigerator about 30 minutes before cooking. This helps it cook more evenly.
  2. Season Generously: Pat the steak dry with paper towels. Then season liberally with salt and pepper on both sides. Let it sit for a few minutes to allow the seasoning to penetrate.

Step 4: Heat Your Pan

Heat your Reverse Sear Pan or cast-iron skillet over medium-high heat for a few minutes until it’s very hot. Add a small amount of oil or butter, ensuring the pan is well-coated but not smoking.

Step 5: Sear the Steak

  1. Sear the First Side: Place the steak in the hot pan and let it cook undisturbed for 2-3 minutes. This creates a golden-brown crust. Avoid pressing down on the steak with your tongs; this can release juices.
  2. Flip and Sear: Flip the steak and sear the other side for another 2-3 minutes. For added flavor, add a few cloves of garlic and sprigs of rosemary or thyme to the pan.

Step 6: Use the Reverse Sear Method (Optional but Recommended)

Cook Steak at Home

The Reverse Sear Pan from Certified Angus Beef® is specifically designed for this technique, which involves finishing the steak in the oven for even cooking.

  1. Preheat Your Oven: Set your oven to 275°F.
  2. Transfer to Oven: Place the pan with the steak in the oven. Insert a meat thermometer to monitor the temperature. Cook until the steak reaches your desired doneness:
  • Rare: 120°F
  • Medium Rare: 130°F
  • Medium: 140°F
  • Medium Well: 150°F

Step 7: Rest the Steak

Once the steak reaches the desired temperature, remove it from the oven and let it rest on a plate covered with aluminum foil for 5-10 minutes. This allows the juices to redistribute, ensuring a juicy bite every time.

Step 8: Serve and Enjoy

Slice the steak against the grain for maximum tenderness and serve with your favorite sides. Whether it’s a fresh salad, roasted vegetables, or creamy mashed potatoes, your steak will be the star of the meal.

Cooking Tips and Tricks

  • Use a Meat Thermometer: This is the most reliable way to achieve your preferred level of doneness.
  • Avoid Overcrowding the Pan: If cooking multiple steaks, ensure they have enough space to sear properly.
  • Experiment with Flavors: Consider marinating your steak or adding a compound butter for extra flavor.
